Happy Summertime! It is almost Summer Solstice, and almost Christmas.
Here in the Harmony Gardens kitchen, it has also been Mocktail Time.
I have been developing alcohol-free, allergy-friendly recipes for delicious summertime party drinks.
These mocktails were inspired by the very tasty-looking Pina Colada. Unfortunately, the original contains lots of rum, but the rum is definitely not missed in this version!
I used whole fruit, and I made a strawberry version as well as a pineapple version. I used coconut cream, and coconut water. I added fruit powder, and honey to taste, and I garnished with edible flowers from the garden. These drinks are super-easy to whip up, and they can be stored overnight in the fridge and served the next day
If you are looking for a bit of bubbly to add to your celebration, you can try my recipe for Fruity Fizz. Mix fruit powder , sunflower lecithin and honey together to make a paste; add soda water, stirring whilst adding to mix evenly; pour over ice cubes into a glass and garnish with mint leaves and edible flowers. Super-tasty, very pretty, and a healthy way to enjoy festive occasions.
