When Life Gives You Lemons Part 2...
There is so much abundance out there in gardens, even at this time of year.
After last week's Lemon Day, I was extremely grateful to receive another harvest of lemons, straight from a huge tree! I collected a whole box-ful, and I did not even scratch the surface, it was so full of fruit.
Lemons are full of zesty vitamin C, which is great for preventing and alleviating ills and chills, especially at this time of year.
In the Harmony Gardens kitchen, I made some Lemon, Honey and Ginger cordial, with a few rose geranium leaves for a subtle floral scent.
I gently infused fresh lemon juice with ginger, cinnamon, nutmeg, star anise, and rose geranium leaves. I strained the mix, added some lovely local Arataki honey, and simmered on a low heat. Once it turned thick and a bit sticky, I cooled it and poured it into bottles to be refrigerated.
This cordial can be diluted with either hot or cold water - or add soda water, edible flowers and mint for a delicious spring mocktail!
